It depends on what instruments you use to measure it.  If your instruments are not holy enough, all you will be able to measure is carbohydrate; it will resemble an ordinary communion wafer in every respect.  But if your instruments have been properly blessed by a priest, however, then you should be able to detect protein, indicating that it may indeed have been transubstantiated into the Body of Christ.

    However, anybody looking at your results who is not a practising Roman Catholic may well see the same readings as an ordinary, unconsecrated, plain not-yet-holy communion wafer.
