Is their a thing as a Scorpio Sphinx?

The sphinx has been found in many cultures, Greece, India, England, the US Military Intelligence and Freemasonry, but not associated with the Scorpio.

Scorpio has been associated with the Phoenix, a bird that dies by fire, but then is reborn in its own ashes.  This is symbolic of the unique trials that only a Scorpio has went through...and survived, often as a "new" person.
