  1. THIMBLE COOKIES

    These are very good:

    THIMBLE COOKIES

    10 - 12 min @ 350.  These are soft cookies.

    CREAM together 1 cup margarine or shortening (or use half and half) with 1 cup brown sugar.  ADD 1 egg.  STIR 1 tsp soda with 1/4 cup hot water and add, also 1 tsp flour.  STIR in 3 cups flour.  Roll in balls and in brown sugar.  Make an indent on the top with a thimble or your finger and place a tiny amount of jelly in this.  BAKE at noted above.

The link below is to Jif's peanut butter recipes.  It includes a recipe called Peanut Butter and Jelly cookies that looks like a good one.  I thought I saw a recipe for a peanut butter bar cookie with a jelly or jam topping recently, but didn't find it on Taste of Home or Betty Crocker.  But maybe just try your own...make a PB bar cookie and then melt some jam over the top when it first comes out of the oven!

  3. Peanut Butter & Jelly Muffins

    (12 servings)

        * 1 cup low-fat milk

        * 1 cup whole wheat flour

        * 3/4 cup all-purpose flour

        * 1/4 cup sugar

        * 1/4 cup vegetable or canola oil

        * 1/4 cup creamy peanut butter

        * 1/4 cup of your favorite jam or jelly

        * 3 and 1/2 teaspoons baking powder

        * 1/2 teaspoon salt

    Prepare 12 regular muffin cups with muffin papers.

    Preheat oven to 400 degrees.

    In a large mixing bowl, sift together the flour, sugar, baking powder and salt.

    In a small bowl, beat the egg with the oil slightly.

    Add egg mixture to the dry ingredients and mix until just combined and moistened.

    Spoon batter into prepared muffin cups, filling each about 1/3 full.

    Spoon one teaspoon of jelly into the center of each muffin.

    Dollop on teaspoon of peanut butter into the center of each muffin.

    Bake for 20 minutes or until golden brown. If a toothpick inserted into the center of a muffin comes out dry (no batter), the muffins are done.

    If you wanted, you could mix the peanut butter with the wet ingredients... but if you spoon it on at the end, it makes for a nice peanut butter and jelly center. Enjoy!

  4. You can make Peanut Butter Thumbprint cookies.  That is a basic Peanut Butter Cookie recipe, use your thumb to make an indent in the top, and put a small dollop of jelly in the indentation and bake it.
