You could use vegetable oil instead of eggs.

i would roll the chicken in milk then your breading then milk again and back to breading...that will coat it well....

Use water, or milk. Or brush the chicken with a little mayo.

Try mustard, especially dijon.

Dip it in milk first, and then roll in the breading.

don't use oil, that's added fat. Use milk whenever in doubt. Milk or egg because both cause the breading to stick to the chicken, the oil will make the breading fall off!
