  1. If you make coffee or tea with distilled water, it will be yuckky. Coffee and tea need alkali in the water to totally develope the flavors. The alkali should make the water a bit basic. If your area has acid rain, your water/coffee may indicate this. I believe that I remember that brewing coffee also makes some organic acids.
