  1. There is a range of strengths in curry powders, from mild to very hot. If a recipe call for mild powder, I would use that, otherwise a hotter one may overpower the flavour of the other ingredients.


  2. you really just have to trust whoever blended the curry powders.  Maybe the mild indian curry doesn't have a lot of the spicier spices like turmeric, and more of the milder spices like cumin or coriander.

    and the normal indian curry has their standard spices of turmeric, black pepper, etc

  3. "curry" is usually a mix of spices so there probably is a difference... cant tell you what that'd be though....  

    in case youre in a hurry because you'd have to mix them for some reason or if you just have normal curry and a recipe says mild indian, it shouldnt matter unless youre cooking for someone who's an expert....

Curry powders from India are always spicier, "normal" curry powders are not spicy at all.  Curry powder is a spice that has literally thousands of variations.  Most Indian chefs/cooks will never use curry powder because you're never really quite sure what the ingredients may be.  The most common ingredient is turmeric, which gives you the characteristic yellow color (& stains!).  The rest of the ingredients are anybody's guess.

    You could always add fresh green chilies, dried red chilies, crushed red pepper flakes, red chili powder or cayenne to any curry dish to really spice it up!
