  1. You're actually asking several questions.

Vegan is not the same thing as organic.

Vegan and organic do not mean "unprocessed."

Most soy is processed- edamame is one exception.

    Lectins are sugar-binding proteins.

Unprocessed fruits and vegetables are vegan, meaning they contain no animal products, but in order to be organic they must not have been treated with chemical fertilizers, pesticides or radiation, and they must not be genetically modified.

  2. Organic does not mean unprocessed.  It means the crop was grown without the use of chemical pesticides and fertilizers.  All the plant foods that vegans eat may be grown either organically (including soy) or conventionally.  Organic and vegan are not synonymous.

  3. I am vegan and I rarely eat organic food.  Just because a person is vegan doesn't automatically mean they eat all organic.  Personally I can't really afford organic stuff.  I am feeding a family of 4 on less than 600.00 per month.  If I had more money I would probably buy all organic, but I just buy regular stuff.

Vegan means you don't consume or wear any animal products.    Organic stuff really has nothing to do with it.  Whether or not a person buys organic is a personal choice.

  4. Sure, Lets take a Look at a Corn chip like Baked Tostitos.  Well they dont deal with animals and have all sorts of garbadge on and on them.

  5. Vegan does not mean organic and organic does not mean vegan.

  6. Organic and vegan are two entirely separate things.  Processed food can still be organic.

  7. Nothing is organic, vegan or not, unless it specifically says it is. It's a U.S. law of some sort (don't know the specifics). And I couldn't tell you if something was processed without looking at the actual label. Sometimes soy is processed (as in the case of TSP) and sometimes it's not. Lectins are sugar-binding proteins so I'm sure there's some processing somewhere in order to get them into food.

However, most ingredients on packages are the fancy word for average stuff. Like ascorbic acid is Vitamin C, sodium bicarbonate is baking soda, and fructose is a simple fruit sugar. Just research the ingredients on the web and decide for yourself if you should eat them.
