I don't read much manga, but there are a two anime series I know about.

I haven't seen it myself, but from what I understand there's plenty of acrobatics in the "Kaleido Star" series:

There are a few other hentai anime series that feature gymnastics, but I don't think that's what you're looking for.  ;-P

Edit:

OAV = Original Animated Video, basically it means "straight to video", though in Japan that's not quite the kiss of death it is in the US.  Also, OAV and OVA mean the same thing.

AniDB is an anime database website with information on the anime and the fansub groups that release subbed versions of Japanese anime.

As noted above, I think Kaleidostar would be good.  I did see a few episodes, and it's about a young girl trying to make it as a circus star, doing mainly the high-wire acrobatics.  And there are two complete series of it, so if you like the first, there will be another one waiting for you!

I'm not sure where you will find it; I saw it on Anime Network.  You can probably buy it off of Amazon.  

(You may also find bootleg copies on IsoHunt, a Bittorrent site, but those probably violate copyright laws. Be warned.)

PS: If you want a really great anime resource, go to Anime Academy.  They have thousands of series reviewed and categorised.  I rely on it quite a bit deciding what to watch.
