Is there any places you can go, to survive for a week or so?

Me and my uncle are interested in surviving in the wilderness and stuff. We are wanting to find some sort of forest that would allow us to camp there for a week or so, hunting and cooking our own food, finding water etc, is there anywhere that allows this?

Forest service permits allow 14 days camping here in CO

Not sure if you guys from around here. Ruidoso has some nice places to camp out earthy style. Not sure about the water thing though. Might wanna google that.
