  1. To begin with, vegetable cells are characterized by their cellulose cell walls, and cellulose is a complex carbohydrate. Vegetable foods can be processed to remove most of the cellulose. But there is always sugar present, since sugars are the energy sources of all living things. (Photosynthesis is a process of synthesizing sugars from carbon dioxide and water using solar energy.)

    Most plant materials also contain starches, which are complex sugars and thus also carbohydrates.

    Chemical processing can remove the sugars (mostly) and you will have oil and protein left. But maybe that is not a desirable goal.


  2. Vegetable oil.  Don't get the hydrogenated stuff (margarine, etc).  Just Olive or rape oil.

    But seriously, atkins nonwithstanding, Carbohydrates are good for you.  They are the best source of fuel available for your body (fats and oils are the next, but those are harder to convert into sugar).  Meat is good too.  All the vegans and vegetarians will tell you that meat is bad and you aren't supposed to eat it, but they're lying.  Meat, as part of a balanced diet, is a far better source of protein than soy, and there are no nutritional, dietary, or scientific reasons to avoid eating meat.  If you're really scared of added hormones (which mostly break down when cooked), get organic meat.  You're more likely to get salmonella poisoning from vegetables nowadays anyway.

  3. Zero carbs would be fruit and vegetables except for rice and pasta.  Mushrooms are classified as iron food for vegetarian as well as celery, lentils, beans, tofu (protein).  Go Vegetarian if that is what you are looking for and include some dairy once or twice a week if you like, so you cut down slowing and then cut out one dairy a month to you get to nothing (just remember dairy is from meat). This way your body will adjust slowly and will not get large amounts or cravings.

    If you are very active you may need suppliments to replace some of the nutrients you are not getting from what you are eating. Check with your Doctor.  Not sure have a blood test and see what your body is lacking then you will know.
