  2. Chocolate Jam Low Fat Cake Recipe

    Ingredients:

    1/2 Cup Orange Juice

    2 Egg Whites

    1 Tbs Honey

    2 Cups Self-Rising or Self-Raising Flour

    1 Tbs Sugar-free Instant Chocolate Drinking Powder

    6 3/4 Tbs Low Fat or Fat-free Milk

    1/4 Cup Dietetic Jam of Your Choice

    1/8 cup Vanilla Low Fat Yogurt

    1 1/3 Tbs Canola Oil or Use Canola Oil Spray

    Method:

    1 Pre-heat your oven to 200 degrees Celsius or 392 degrees Fahrenheit

    2 Spray your cup cake pan with canola oil spray or use normal canola oil to coat your cup cake pan.

    3 Combine the juice, egg whites and honey and mix thoroughly.

    4 Add your flour, and chocolate powder to the mixture and mix thoroughly with a spoon.

    5 Add milk to moisten and mix again.

    6 Spoon 2 tablespoons into each cup cake. Place into the oven for 15 minutes or until the cake springs back when depressed slightly.

    7 Remove the cakes from the pan.

    8 Cut the top off each cake and spoon 1 tsp of jam and yogurt onto each cake and then replace the top.

    9 Serve immediately.

    Makes 12 cup cakes.


  3. To a box of cake mix (sugar free if you can find it) add one can of diet soda (no other ingredients) and mix.  Bake as directed on box. When cool  top with fat free whipped topping mixed with sugar free instant pudding and 1 cup skim milk.

    This is so easy and you can also use canned pineapple or fresh fruit to add more flavor.

    Use diet 7-up, Sprite, or other light drink with light cake mixes.  With chocolate mixes use diet cola or diet root beer.

  4. You can make a fat-less sponge as used in swiss rolls. There are many sugar substitutes now so it may be worth looking on their web sites for recipes.

    Fat-less sponge.

    4 Medium eggs

    100g / 4oz Caster sugar

    100g / 4oz Plain Flour

                

    2x7” sandwich tins

    The base only lined with greaseproof paper or baking parchments and lightly oiled

    Temperature: 150°C

    Time: 20 – 30 minutes



    Method

        

    1 Whisk the eggs and the sugar on full speed using a food mixer or if whisking by hand place the bowl over a pan of hot water and whisk until the mixture becomes creamy white and a ribbon trail is left in the top of the mixture when some mixture is lifted from the bowl.

    2 Sieve the flour and place the flour back into the sieve again to sieve over the mixture and make sure the flour is added gradually.

    3 Re-sieve the flour onto the egg mix and cut the flour in with a large metal spoon. Use a slicing action to prevent cutting out the air.

    4 Once all the flour is added, pour the mixture evenly into the two cake tins. Scrape gently down the side. The mixture should still be light and creamy.

    5 Bake until light golden brown and springs back to the touch.

    6 Remove from the tins and place on a cooling wire to allow to cool.

    7 Sandwich together with desired filling.

    Fat and Sugar Free Healthy Cake

    Ingredients

    1 1/2 cups low-fat buttermilk

    1 cup rolled oat (not refined or instant)

    1 cup whole wheat flour

    1/2 cup oat bran or natural bran

    1 teaspoon baking powder

    1 teaspoon baking soda

    3/4-1 cup chopped prunes

    1 banana, very ripe well mashed (or 3 oz of unsweetened apple sauce,

    1 tablespoon ground cinnamon

    1/8 cup honey (optional)

    Directions

    1Place the oatmeal and the buttermilk in a bowl (a bit in advance so the oats soften)- mix well Add dried fruit.

    2Add all the other ingredients and mix very well- the mashed banana (or apple sauce, or pureed prunes), last Pour batter (it is quite solid, like for muffins) in a 9 inch, or 23 cm, non-stick loaf pan; sprinkle with oat flakes and let it rest in the pan for 20 minutes (before baking) Bake in preheated oven- 350ºF or 180ºC for 1 hour to 1 hr 10 mins (really depends on the oven).

    INGREDIENTS

    10 egg whites

    1 1/4 teaspoons cream of tartar

    1 teaspoon vanilla extract

    1/2 teaspoon almond extract

    1/2 cup sugar

    1 cup cake flour

    2 cups fresh raspberries

    DIRECTIONS

    In a mixing bowl, beat egg whites until frothy; beat in cream of tartar until soft peaks form. Add the extracts. Gradually beat in sugar until stiff, scraping bowl occasionally. Sift flour over beaten whites; sprinkle with berries. Gently fold flour and raspberries into batter until well mixed. Pour into an ungreased 10-in. tube pan. Bake at 325 degrees F for 40-45 minutes or until lightly browned and entire top appears dry. Immediately invert cake pan; cool completely, about 1 hour.  

  6. I would go to my local major super market and go the bakery section.

    They do sell cakes with no sugar ( using sugar substitute) and low fat.  Read the ingredients on the package and then try to replicate as much as you can.  I would also do a search on Google and type in all the key words you have in your question.    The answer to your question is yes, but I do not have a specific recipe.
