Lots and lots.  Table Mountain, Signal Hill, Cape Point, The V&A Waterfront, the Stellenbosch Wine Route, Camps Bay, Robben Island (refer http://www.cape.town.co.za/).  

Try a bus tour from the V&A Waterfront through central Cape Town which will also take you around to Table Mountain and Camps Bay (hop-on-hop-off).

For me a trip to the top of Table Mountain is a must, a walk in the Company Gardens with all the beautiful old trees, rose garden and to feed the squirrels is special, a visit to the Castle, the flea markets, Long Street and the Waterfront is also worth while, Muizenberg is wonderful to swim and and the view from Blouberg Strand is magnificent, you don't know what is more beautiful or the blue-est the mountain, sea or the sky  -  enjoy

It would really depend on your time schedule, as Cape town has alot to offer, from the mountain, the cable car, the waterfront, Kirstenbosh gardens to Newlands cricket grounds, the wine the beaches in Camps Bay, to the people in general.

I lived there for almost ten years, and I never got to see everything Cape Town has to offer.
