Question:

Is there such thing as "vegetarian" meatloaf? Can you help provide a recipe?

By meatloaf, I mean something that sort of resembles a meatloaf made from ground beef (except using soy flour or some other vegetarian ingredient). It can contain eggs and/or milk-- no need to be vegan. Thanks.

  1. I saw Mario Bitali do Eggplant Meatballs recently ... You could try to work these into a loaf, if you like.

    2 tablespoons salt

    3 large eggplants, to yield about 4 pounds, peeled and cut into quarters lengthwise

    4 slices day-old bread

    1 to 2 eggs

    1/2 cup plus 1/4 cup pecorino, freshly grated

    2 cloves garlic, finely minced

    1 bunch Italian parsley, chopped to yield 1/4 cup

    1/2 cup fresh bread crumbs

    1 cup extra-virgin olive oil, for frying

    Bring 6 quarts of water to a boil and add 2 tablespoons salt. Add the eggplants and boil 10 minutes. Dip the bread in the water and remove, squeezing to drain the water and set aside. Remove the eggplants from the water and drain well. When the eggplants have cooled, coarsely chop them and place them in the work bowl of a food processor. Add the soaked bread and 1 egg and pulse to form a somewhat homogenous paste adding more egg if necessary. Add 1/2 cup pecorino, garlic and parsley and continue to pulse until a smooth yet somewhat dry mixture is formed. Do not over-process.

    Turn the mixture into a mixing bowl and place bread crumbs on a large plate. Using your hands and working quickly, roll the eggplant mixture into balls with a 1/2-inch diameter and roll each ball in the bread crumbs to coat. Hold each ball on a sheet tray.

    In a heavy-bottomed skillet, heat the olive oil until just smoking. Cook the eggplant balls in the oil a few at a time, for 6 to 7 minutes, until dark golden brown, turning gently with a wooden spoon to evenly brown all sides. Remove to a tray or plate lined with paper towels. Sprinkle with the remaining pecorino and serve.

    BLACK EYED PEA LOAF

    INGREDIENTS:

    2 tablespoons butter

    1/2 cup finely chopped onion

    1/4 cup finely chopped red bell pepper

    1 teaspoon curry powder

    2 cups cooked black-eyed peas, drained

    1/3 cup raw rolled oats

    1/2 cup yellow corn meal

    2 cups vegetable broth or chicken broth

    salt

    pepper

    PREPARATION:

    Preheat oven to 350°. Grease a 9-inch loaf pan.

    In a large skillet, heat the oil over medium-low heat and add the onion and chopped bell pepper; sauté until the onion is tender and golden, about 5 minutes. Add the curry powder and cook, stirring, for about 2 minutes longer. Add the black-eyed peas, rolled oats, cornmeal, and broth; stir well.

    Turn the black-eyed pea mixture into the prepared loaf pan; bake for 45 minutes, or until the oats and cornmeal are cooked and have absorbed all the liquid. The consistency should be that of a very thick mush. Stir in salt and pepper to taste and press the mixture firmly in the pan.

    Let the loaf cool; chill thoroughly in refrigerator. Turn loaf out of pan; cut into slices. Eat cold or fry in butter.

    Serves 6.

  4. 1/4 cup walnuts, crushed

    2 celery ribs, chopped

    3/4 cup onions, chopped

    2 green onions, thinly sliced

    2 garlic cloves, minced

    10 ounces firm tofu

    8 ounces fat free feta cheese, crumbles

    1 1/4 cups quick-cooking oats

    3 tablespoons soy sauce

    2 tablespoons ketchup

    2 tablespoons ketchup, more

    ketchup, for topping

    1 tablespoon Dijon mustard

    2 tablespoons Italian parsley, chopped

    1 teaspoon poultry seasoning

    Directions  

    Preheat Oven to 350°F.

    Grind walnuts to powder and set aside.

    Sauté celery, onion, green onion and garlic over medium heat until tender about 4 minutes.

    Remove veggies from heat and let cool while you do the following steps.

    Mash tofu in a bowl and stir in walnuts, feta, oats, soy sauce, ketchup, mustard, parsley, and poultry seasoning.

    Once mixed stir in veggies.

    Season with salt and pepper.

    Coat 9X5in loaf pan with cooking spray.

    Add mixture and pack in tightly.

    Top with a thin coat of ketchup.

    Bake for 55 minutes.

    1 box Nature's Burger veggie burger mix (about 1 1/4 cups)

    1 egg

    1 cup water

    1/2 cup bread crumbs

    1/2 onion, chopped

    1/2 green pepper, chopped

    dash vegetarian Worchestershire sauce (optional)

    PREPARATION:

    Mix together all ingredients including Nature's Burger mix and press gently into a lightly greased loaf pan.

    Bake for 45 minutes at 350 degrees.

  5. Golden Neat Loaf

    Lightlife makes a product called Gimme Lean "Beef".

    I suggest using of two tubes of it crumbled and mixed with a package of Firm Tofu,

    half a cup of Tomato Sauce for color, moisture and flavor.

    Stiffen the mixture with some Bread Crumbs.

    Add 1 Tbs. each Granulated Onion and Granulated Garlic and Italian Herbs.

    Add Sea Salt and Black Pepper to taste along with a quarter cup of Parmesan Cheese.

    Mix until everything is incorporated and it reaches the desired consistency adding bread crumbs as needed.

    Shape it, placing it in a baking dish; and then using a Silicone Brush  paint the surface with a mixture of granulated garlic, granulated onion, paprika and extra virgin olive oil. Bake at 350 for 25 minutes.

    Allow to sit for ten minutes before you try to slice it.

  6. Here's the meatloaf recipe I use...I found it on vegcooking.com. The ironic thing about this is that I HATED meatloaf when I was a meat-eater, but I like this version (go figure!). Enjoy!

    ~Mama's Mock Meatloaf~

    Better than what mom used to make. Serve it with ketchup, mashed potatoes, and gravy.

    1 medium onion, diced

    1/2 green pepper, diced (optional)

    3 Tbsp. vegetable oil

    2 packages beef–flavor Gimme Lean Beef

    1/4 cup oatmeal, dry

    2 slices white bread, crumbled

    3 Tbsp. ketchup

    2 tsp. garlic salt

    1 tsp. pepper

    Coating ingredients:

    1/4 cup ketchup

    1/4 cup brown sugar

    1/2 tsp. dry mustard

    1/2 tsp. nutmeg

    • Sauté the onion and green pepper in the oil over medium heat until soft. Combine in a bowl with the ground beef alternative, oatmeal, bread, ketchup, garlic salt, and pepper. Thoroughly mix with a spoon or your hands.

    • Press the mixture into an oiled loaf pan. Cover with foil and bake at 375 degrees F for 30 minutes.

    • Meanwhile, mix together the ingredients for the coating and set aside.

    • Remove the loaf from the oven and turn it out onto a baking sheet. Spread the coating over the entire loaf. Cook, uncovered, for another 15 minutes.

    Makes 6 servings

  7. www.bocaburger.com has all kinds of great, easy recipes. They have a recipe for "meatloaf", and also for "meatballs." Also, if you have a favorite non-vegetarian recipe that you used before becoming vegetarian, just use that recipe and use Boca Crumbles instead of ground beef. Hope it turns out well!
