Question:

Is this a high or a low living standard?

When they tell you that a family live on the countryside, in the 1500s, they have animals, farmers and servants. They describe their house and it's made out of raw material. But they also have a special place for farmers and servants to sleep in, is this supposed to be a high or a low living standard? Or maybe both but if we look at the servant then it's low and if we look at the owners of the house then it's high. Please tell me your opinion

I think you can safely say that for the household in its entirety, there is a reasonably high standard of living overall.   The family have the animals, a home, servants and of course the home, and the servants and farmers are part of this household, which, despite their subordinate role brings them higher up the ladder than if they were considered on individual merit.
