Question:

Is this jerky safe to eat?

I made made a small batch of a pound of flank steak and to marinade it I used a steak marinade and nothing else ( no curing salt or soy sauce and stuff) I heated it at 155 Degrees F for about 5 1/2 hours... Is it safe to eat though...

  2. You really don't need to put in as much salt as most people do when doing jerky.

    Tx2step is slightly wrong!! Your cooking time and temp is correct for using the oven. Dehydrators do take up an enormous amount of space, but do a fabulous job of drying foods.

    You don't need soy anything on your jerky!!

    I would stash it in an air tight container in or out of the fridge! I have even shipped this stuff to aircraft carriers in the gulf of tonkin in the past!!

    Yes! it is safe to eat today, it will be safe to eat if you happen to lose the container, next year!

It's safe to eat, but probably should have been dried for at least 12 hours.  Make sure you refrigerate it, because it will go bad fairly quickly.    You should get an inexpensive food dehydrator.  I've had one for over 30 years, and it makes great dried fruit and beef jerky.  I also only use steak marinade, since I'm allergic to soy sauce:)
