Is white chocolate really chocolate?

No, in the industry it's not considered to be chocolate.  Cocoa nibs (which come from pods grown on the cacao tree) are crushed between heavy steel rollers.  The result is a liquid mass, known as "chocolate liquor" (even though it isn't related to alcohol).  This liquor consists of  both cocoa butter and cocoa solids.  Next, the chocolate liquor is squeezed in a hydraulic press, which squeezes out the cocoa butter, leaving the cocoa solids behind.  They are then ground into a powder.  If the cocoa butter is to be made into candy it's mixed with sugar and flavored with vanilla or some other flavoring, resulting in white chocolate. *Yes, I like it!
