Hi I am a canadian, living for many years in italy, owner of a restaurant in piemont.  My close friend who is Italian, opened a few places in California, and now is back here in italy. He knows about visas, green cards etc. He has a web site, where he has a database for work overseas, visit the site or  write him directly.  www.scuolagourmet.it  He also speaks and writes both italian and english  Good Luck
