Question:

Its my moms birthday and i want to make dinner for the two of us while shes @ work. Im a vegetarian though.

  1. Wow, what a sweetheart.  I'm sorry I saw this too late.  A casserole is always good.  I'm sure the fact that you're cooking it (and that it will hopefully taste good) is enough for your mom and she won't miss the meat.  

    Anyway, there's a luscious Portabello Pot Pie in "La Dolce Vegan" by Sarah Kramer.  However, when I make it, I double the dough recipe and use a bottom crust instead of a top.  Use yams or maybe Yukon Gold potatoes in the recipe.  If you both like mushrooms, this is a truly lovely meal with a pretty salad--romaine lettuce, tomatoes, shredded carrots, cucumber, some almonds, and a simple vinaigrette.

  3. The pasta primavera idea is a good one!!!

    You could make a sauteed dish of cut up potatoes, onions, bell peppers of different colors & seasoning. But cut them in big pieces, even the onions.

    Make some black bean soup or something like that. flavor it up.

What i did on my moms birthday is had chip and dip on the table for her, Look up a meat dip, just replace the meat with that fake soy "meat" (thats what i did, cause i am a vegetarian too) You can find it in the vegetarian section of your grocery store. And told he i was making dinner, and i made her a soup in the slowcooker, (get a vegetarian slow cooker cookbook, if you don't have a slow cooker, just make your favorite vegetarian meal, or what use to be your favorite non-vegetarian meal, and use substitutes, like my mom use to make spanish ricem it had beef in it instead i used that "meat" stuff i got from the vegetarian section at my grocery store. Then for desert i got her favorite cake from the store. =) Good luck.

  10. Aw, aren't you a good daughter? Choose an ethnic theme and go with that.

    For Asian-ish, you can do a stir-fry and rice.

    For Thai or Indian, a curry plus rice. (Lentil soup, naan, etc are nice extras.)

    Italian has a million ways to go: lasagna or other baked pasta, stove-top pasta with sauce, plus salad and garlic bread.

    Mexican: beans and rice, burritos, tacos, taco salad, fajitas.

    Vegetarian hot sandwiches, soup, etc...

    Just go with it! Make something like what you'd eat, but more of it.

  11. I'm a vegetarian and I love to eat what I call fake chicken Parmesian. You just cook some pasta and put fake "chicken" patties (Like from morningstar) with some pasta sauce in the microwave and then put cheese on top. Its really good and if you can stand it then you could fry your mom some real chicken for hers. Good luck!

  12. If your mom isn't a vegetarian, try cooking something up like lasagna without the meat stuff. I'm sure you know how to make lasanga, if not, find a recipe and cook ahead of time. It would probably take three hours or so to make it. That's all I can say.
