To answer your Question seriously, a red apple is a ripe fruit meant to be eaten as is ! If put in a lechon's mouth, the heat of the roasted pig will not only char and blacken it, but also make it unappetising  and inedible as well !

The green apple, on the other hand, is raw and slightly sour in taste - but it can withstand being cooked or heated, without losing its colour, texture or shape.

So, my vote will be for the green apple.

I guess avocado would perfectly fit a lechon's mouth.

Red apple is the regular practice.  But I like Green apple more.
