Jamaican Rice and Peas?

What is the best rice to use to make Jamaican Rice and Peas? I've used regular rice and it was good, but I was wondering if there was another rice that's even better.

Jordan M is right, I am a former chef from Canada and worked in Jamaica, and still make it now even though I am a vegatarian, I use a par-boiled rice, but Uncle Bens is fine to, I use canned red kidney beans or canned pigeon peas, some coconut milk but more stock than CC milk, you make it like a rice pilaf, cook a bit of white onion in some oil toast the rice, add the sotck and CC milk, bring to a boil, I spice it with a bay leaf, some Jamaican thyme, a dash of allspice or nutmeg, a bit of salt and pepper, even a part of a scotch bonnet pepper sans the seeds, let it cook covered for 20-25 minutes stir to fluff, add my drained and rinsed beans, and let it sit to warm them through.

    When finished I add some butter, chopped parsley and some green onions for colour, then serve with the main, jerk chicken/pork, baked fish or oxtail stew.

  3. if you use Jasmine rice, it comes out better, also don't forget to add the coconut juice (unsweetened) to the peas before adding the rice, and a sprig of thyme, and a scotch bonnet pepper.

  4. my grandaunt from Jamaica makes  delicious rice and peas. she always uses parboiled rice . try it!!!!

  5. try using jasmine rice.  it has a nice texture!
