My husband loves Japanese curry. I've ate it once and I didn't like it really. But, we live in a new town and yesterday we went to the Indian grocery. He has been mentioning curry for days, now.

Can you give me advice on how you make your Japanese-style curry? I want to make it so we both eat it.

  1. I am a former chef and while I am not Japanese, I have worked in Japan, and they like the chinese use more ginger, less garlic, a bit of soya sauce, a thinner sauce altogether and it is a bit spicy.

You can make it wiht Indian curry powder and it is similar to there but, cook the ginger, garlic and fine chopped onions in oil, add the curry powder (2 tbsp) and some stock, bring to the simmer and season with soya sauce, sugar, I like Japanese 7 pepper blend but chili flakes or sauce is fine.

I saute my meat, chicken or shrimps in another pan and thicken the sauce with cornstarch, adding it at the end just to finish the dish, serve over rice or noodles, now it is thinner so I like to use udon or soba noodles also

  2. You can buy the package curry in a box and just follow the instructions written on the package! Usually they have translations when the product is exported. You should be able to find it in Asian grocery store!
