Ramen out of a packet isn't cutting it. What kind of soup base ingredients are used for ramen?

  4. try getting katsuoboshi (a kind of fish flakes) and kombu sea weed to make the soup stock "dashi". Make about two or three cups worth. Then add 3/4 cup chicken or beef stock whatever flavor of ramen you wanna start with , then add half a cup of soy sauce and half a cup of mirin, and a decent helping of sesame oil, and some togarashi (get the kind that says ichi on it). Add some ginger and thar ya go. It's not exact but its better than plain ol ramen and pretty similar. Poor that over some boiled and rinsed soba or somen noodles.

    Or you can get some dried mushrooms, some veggies you like, and some meat to match your ramen (chinese beef , the pink stuff you can get from safe way for the beef flavor, frozen shrimp for the seafoody flavors, just throw it in with the soup stock or noodles, cut up some frozen chicken b*****s and boil them before putting in the noodles and flavor packet, etc) and add that to the regular out of the pack ramen to enhance it's flavor and nutritional value.

  6. Try buying soba out of a package, whether fresh or frozen. (Ramen is often the instant type, not so tasty.) It often comes with a soup base but you can make your own. I add soy sauce, a dash of sesame oil, Japanese red pepper flakes (the 7 seasoning one), and whatever vegetables you want. Put enough soy sauce to color the soup water, then taste it to see if you need more. You could also make a miso based noodle soup.
