Question:

Japanese restaurant in the West. Sheff?

Lets take an example, there are many Japanese restaurant in North America(Canada or USA), however, most sheffs are not Japanese. I am native Japanese man and first time I ate Japanese food in the USA, I was surprised that people consider such a fake and low quality food as Japanese food. Like a sushi or tempra are awful. Do AMerican people know that Japanese food in their place and In Japan are totally different?? Or the taste is not as good as Japense food in Japan becuase, they are cooked for American peopele??

Finding authentic ethnic cooking anywhere in the world is impossible.  I travel more than most, and agree totally that Japanese food in the US is not the same as in Japan.  On the other hand, and in all fairness, Japanese food in Australia is different, as well- different than in the US and different than in Japan.  Personally, I prefer Japanese food in Japan, but that does not detract from the unique qualities that fusion styles offer all diners.  Some people prefer fusion styles .  To me, this is good news- it means there will always be diversity in our diet, and new dining adventures.
