  2. The best is Sushi Yasuda located on East 43 strret just off Third Avenue.  If you like, ask to sit at the sushi bar, especially in front of Yasuda - the owner. You will enjoy this but make a reservation!  212 972-1001

  5. I think you are talking about two different types of Japanese cuisine.

There are sushi restaurants, many of which have great sushi bars, where you can sit right up where they are preparing your food and watch. You can talk to the chef and tell him exactly what you want, or tell him the kinds of things you want and how much you want to spend, and let him make something just for you.

Then there are the Hibachi style restaurants where they cook food for you on  a grill and flip it onto your plate. It's almost more theater than cuisine, and it's very touristy. I've never been to one that had what I would call great food, but there's always a first time I suppose. The food at the Hibachi restaurants tend towards steak, grilled chicken and shrimp. Also fried rice of some sort (which isn't really a Japanese dish, but....) All cooked food, in other words, as opposed to the sushi restaurants, where the food at the sushi bar is mostly raw (but not all of it.)

And yes, Benihana is an example of the Hibachi style of restaurant. There's also a Hibachi place called Ginza right near me in Park Slope, Brooklyn, but I personally think it's vile!
