I like to order the extra crispy ckicken. It taste really good but when I bite the chciken all of the skin falls off. Why isn't the skin more attached to the chicken. Why does it keep slipping off?

  1. Because the chicken is dead, and the cells cannot respond biologically and adhere to their crispy fried surrounding.


  2. Its fried so much that when you bite into it theres nothing holding it together (that is the skin and the meat). Other chicken still has fat and some skin attached to the meat.

Once the bird is no longer living, the molecular structure of the skin, fat and flesh change - the fat, under the skin can no longer adhere to the dead flesh as it, and the skin, require a living organism to supply nutritional needs.  When exposed to the high temp's of frying, fat absorbs the heat more quickly so its' cellular structure changes at a more rapid rate than the skin and flesh, forming a barrier between the flesh and skin so the skin peels off.  I hope this isn't more than you wanted to know!!

  9. i know what you mean. i have noticed this too. i think the stuff that makes it like it is, the coating is so heavy, it pulls the skin down by the weight of it. it is like dipping it in pancake batter before hand and then they fry it. the skin is made to look and feel fatter but it is the batter that adds weight to it. good though, yummy and crunch with lots of salt. coke and cole slaw. yum.

  11. because those chickens are featherless and because they don't have as large of feather dimples, the skin is super thin and cooks down to nothing and falls off.
