What can you put on the soil to reduce the amount of acid in the tomato fruit?

  1. You can't, but you can buy/grow orange tomatoes.

I would just suggest growing a variety that is less acidic.  Every year we grow a few different ones and theres one in particular called "Mr. Stripey"  that has this nice red/orange/yellow marbling effect to it and it is not as sour/acidic as some of the deeper red colored varieties.  You might try something like that.
