Can you make kimchi using red cabbage? Has anyone tried this?

  1. Oh yes, its great. I have tried it, apparently it takes alot longer to ferment which is why its not popular. It doesn't taste as good as white cabbage, and i'm generally a red cabbage fan. But it is still great.


  2. Yes you could make kimchi from red cabbage, though it will not look appetizing cause of the color from the cabbage, and kimchi is actually made from chinese cabbage, using cabbage or the red cabbage would give you a different taste, as cabbage has a disticnt flavor. . .

  3. I'll second will's answer.  I make kimchi using beetroot, among other things.  The beetroot kimchi of course has a deep red colour, but it tastes fine and I think it looks acceptable.
