Kindly give me the hot and sweet recipes of tomato sauce and tomato ketchup pls!

Would like to put homemade preversatives for longer shelf life. Thanks in advance to all who take the trouble in writing in.

    Fresh Tomato Sauce

    NGREDIENTS

    1/4 cup olive oil

    6 tomatoes, chopped

    3 onions, minced

    2 green bell peppers, minced

    4 cloves garlic, minced

    3 tablespoons white wine

    salt and pepper to taste

    DIRECTIONS

    In a large saucepan, heat oil over medium heat; add tomatoes, onions, green bell peppers, garlic, white wine and salt and pepper to taste.

    Mix ingredients well; cover and simmer for 30 minutes. Serve.

    1Kg Tomatoes

    2 medium sized onions

    little ginger

    some garlic

      4-5 cloves

      1/2 teaspoon salt

      2 1/2 tablespoon sugar

      1/4 teaspoon red chilli powder

      1 spoon vineger

    1/4 teaspoon Sodium Benzoate (for presevation)

    Method

    cut tomatoes, onions, garlic and ginger in small pcs. with just little water and heat it in pressure cooker till one or two whistles.

    Mash them in mixer and strain them properly with a strainer

    them put it in a container over high heat and add salt, sugar, cloves and red chilli powder and bring it to boil

    now bring it to boil and then lower the heat and then let it thicken on lower heat

    when you find it is thick enough, just add sodium benzoate and vineger and mix properly and let it be on heat for two mins. (can also use artificial red color for nice colour of your ketchup)

    let it cool and your home made tomato ketchup is ready....

    i have made it myself no. of times and it turned out to be very good... hope its same with you..

    (Sodium benzoate is easily available in any medical store)

    Its hot and get a sweet soya sauce .

    Mix it up together and your gonna get

    a yum & wonderful sauce !

    1 peck tomatoes (approximately 8 quarts)

    1/2 cup sugar

    2 tablespoons dry mustard

    1 tablespoon ground allspice

    2 cups cider vinegar

    3 tablespoons salt

    tomato ketchup

    1 tablespoon black pepper

    1 teaspoon ground cloves

    Preparation:

    Select good, ripe tomatoes. Scald and strain through a coarse sieve to remove seed and skin. Measure 1 gallon. When the tomatoes become cold add the remaining ingredients. Let simmer slowly for 3 hours. Pour into hot sterilized 1-pint jars and seal. Process for 15 minutes in boiling water bath. Add 5 minutes processing time for altitudes from 1,001 to 6,000 feet, and another 5 minutes if over 6,000 feet.

  5. I hope this helps a little bit. You can make sweet and sour sauce by mixing ketchup and grape jelly and warming it up. You can make tarter sauce by mixing ketchup and mayo with diced pickles. You make salsa by mixing diced tomatoes, jalapeno, onion, cilantro, and some lime juice.
