Ive got some lamb mince and want to make my own burgers. Do i need to add anything to the meat or do i just mould them into shape and cook?

  1. My boss gave me this recipe to marinate lamb: smash rosemary in a bowl, then add garlic, olive oil, salt and pepper.  Marinate the lamb for at least 1 hr before cooking it.  I used this marinade for lamb kabobs and it was delicious.  Everyone loved it.


  2. I like this recipe and I&#039;ve done it many times without the tzatziki sauce:

    Mini Lamb Burgers

    ingredients

      For tzatziki:

    ½ English cucumber, peeled, seeded, and grated (¾ cup)

    ½ cup plain yogurt, preferably whole milk yogurt

    2 teaspoons fresh lemon juice

    2 teaspoons chopped fresh mint

    1 small garlic clove, minced

    Salt and pepper

    For lamb burgers:

    1-½ pounds ground lamb

    ½ small onion, minced (¼ cup)

    ¼ cup chopped fresh parsley

    2 teaspoons chopped fresh oregano or 1 teaspoon dried

    Salt and pepper

    4 pita breads (6-inch)

    Iceberg lettuce, for serving

    2 medium beefsteak tomatoes, sliced, for serving



    Heat grill or grill pan to high. Make tzatziki: In a medium bowl, combine cucumber, yogurt, lemon juice, mint and garlic; season with salt and pepper. Cover, and refrigerate until ready to use.

    Make burgers: In a medium bowl, use a fork to gently combine lamb, onion, parsley, and oregano; season with salt and pepper. Gently form mixture into 16 small patties, about 3/4 inch thick. Grill until medium-rare, 2 to 3 minutes per side.

    To serve, warm pitas on the grill or directly over a gas burner, turning occasionally. Halve pitas, and fill with lettuce, burgers, tomato, and tzatziki.

  3. use an egg in with the mice. if you used just the mince, the whole burger would fall apart.

    try adding some red/green peppers in there too as they would bring out the flavour of the lamb, or try making minted burgers, add a tea spoon or 2 of concentrated mint sauce to the burger mix for nice minted lamb burgers.

  4. I am not for sure but this is how I always make mines 1 lb. ground lamb

    1 sm. onion, chopped

    1/4 c. fine dry bread crumbs

    1/3 c. finely snipped dried apricots

    1 egg, beaten

    2 tsp. curry powder

    Combine all ingredients thoroughly. Shape patties. Pan fry about 10 minutes

  5. of course you have to add things. it will taste awful otheriwse.

    i like them like this:

    grate some onions into your mince, then add some black pepper and salt, then finely chop some parsley, add this also. a sprinkle of cumin and a sprinkle of plain flour. then mix them all in together and make in to burger shapes.

    this works best on a grill or barbecue but frying is cool also. good luck.

  7. I find spicing it up a little can really flavour ones burgers. First thing I would suggest however would be to add 1 part minced beef to 2 part lamb in order to add some fat and flavor into the burgers...otherwise you risk the burgers coming out very very dry.

    Finelly minced onions and garlic is a must with lamb. They complement the unique taste of lamb in any way it&#039;s cooked. Finally I would add some heat in the form of chilli peppers, and some earth flavors as per your liking. I usually go with Italian spices, some all spice (very evry little...just to round out the flavors).

    As a final touch I would crack in some eggs (1 per 4 patties) to help keep everything together. Add bread crumbs if required (if the meet has too much condensation in it from defrosting or something of the like, bread crumbs help the meat for nice firm patties). With the eggs, minced beef and bread crumbs, you will have perfectly shaped patties that will not fall apart, will have a nice crust on the outside with all the flavors and juices in the middle.

    These general guidelines are what I use for bison, lamb and pizza burgers. Any extra additions are based on ones palate.

  8. It is up to you and your tastes.  We usually add some onion, garlic, and spices.  Maybe a little masala, or chilli for kick, or if you are more traditional some chopped mint!

    Then just shape them and cook them.

    The question you&#039;re asking leads to another.  Can you see specks of white fat in your minced lamb.  Whether or not it falls apart depends primarily on the fat content of your mince.

    In other words, if you have some white fat in with the lamb you can just mould and cook.  You have a plethora of options as to flavoring, but if you just want a salt and pepper lamb mince burger, you&#039;re FINE!

    Now if you do not see any significant white in your mince, you must add some bread crumbs and water, or egg, or other fat for a binder to hold the burger together.  When I have a lamb with little fat, I add some pork fat ground up to make the burgers.

    We raise our own meat and hunt wild venison so I&#039;m accustomed to checking the meat for fat level to see if the burger will mould together properly without assistance.
