Large catering event in a field..?

I have agreed to do a large catering event for 500 people. After accepting the job I was informed that the event was going to be held in a wheat field with no power, water, or sewage. Anyway, I few a questions. I need to follow health code so I need to know how to set up a handwashing station. I can't just use antibacterial gel. Also, I know how to transport the cold food within temp. limts, but I need to know how to transport the hot food (hamburgers, hotdogs, shredded pork, and grilled steaks) approx. 30 min away. without it falling under 135 degrees until I can them in chafing dishes with sterno. Not doing the job is not an option!! Thanks in advance for serious replies.

  1. well board of health wants you to use a bucket of water with a cap full of bleach in it to sanitize as far as transporting you need to put in a warmer while transporting it but most places just transport then reheat with sternos , but very good question


  2. I don't know where you are located, but you can rent different portable hand washing stations. To purchase they run from $500-$1300 (depending on model) so I don't think that renting one would be that expensive. I found a few websites that have them to rent and I would check your local rental facilities.

  4. Most health departments require 140 degrees not 135.

    You may want to contact a caterer for advice or to pass on the job.

    The fines are huge.

    You also need permits in almost every city or county, or parish.

    The permit takes time to get also, and you need to have all your equipment inspected prior to getting approved for the permit.

    Do more research.

    Coolers will also keep HOT food HOT. Use them not just for cold foods.
