Large cinnamon roll for wedding cake... good recipes anyone?

My wedding cake is going to be three separate tiers of round cake-pan sized cinnamon rolls. I'm going to make it probably. I want some good recipes and decorating ideas for it.

  1. I used to work at Cinnabon, and here is what we did for the frosting:

    Use one part butter, one part cream cheese, and two parts powdered sugar. Put the butter and cream cheese in a mixer and beat on high for 5-10 minutes. The resulting mixture will be very light in color and well fluffed. This is when you start adding the sugar a little at a time to prevent it flying all over the place. After all of the sugar is in, add a couple dashes each of vanilla extract and lemon extract. That is the closest you'll get to buying the real thing.

      

      




  2. The "fat man" is right (even though i feel mean calling him that) Bread dough is quick, easy, and usually tastes great. I don't know what type of Icing that you are going to use but I would love that with a great cream cheese recipe. I have a recipe somewhere that is for a "crusting" cream cheese frosting that works just like buttercream. You will know what that is if you do cakes i'm sure. If you are standing the tiers on top of each other make sure to use lots of support, but I think with using the crusting icing you could make it look just like any wedding cake with a GREAT suprise inside.   4. My mom used to make the best cinnamon rolls out of plain yeast bread dough.

    After the second rise.....

    Just roll it thin, use lots of butter, sugar, honey, cinnamon and just a touch of clove.

    Roll it up, slice into the desired thickness, place in the pan and allow to rise again.

    Bake and consume while hot.
