Left pizza dough rising all night by accident, is it still okay??

i meant to put it in the refrigerater to finish rising but i forgot, is it still okay, it was out for about ten hours at room temperature

  1. It won't rise in the fridge...well, it will, but very slowly.  I let mine proof (rise) twice...as long as it doesn't smell "sour" you should be ok to use it, just punch it down.  The yeast is still alive, it's just a matter of whether or not it's eaten up all of the sugars in the mix.

    The dough will rise in the refrigerator, but at a much slower rate.  In fact, refrigeration gives the dough time to convert some of the startches into sugars so you end up with a better tasting crust.

  3. It is a good thing you forgot, the refrigerator is too cold for the yeast to make it rise.

    Moist dough between 78 degrees and 80 degrees is an ideal environment for yeast growth. Since yeast is very sensitive to temperature, temperature is a major factor in how fast yeast multiples. Yeast is dormant and will not grow at 40 degrees and grows only slowly at 55 degrees. Yeast dies instantly at 140 degrees. We recommend not using water warmer than 120 degrees to avoid accidentally killing the yeast.

  4. I am sure it is fine. I have a dough that requires 24 hours at room temp so yours will be fine!
