  1. In the rare instance there is leftovers and they don't get eaten right away after arriving home - doens't taste quite as good the next day. Won't kill you, I have eated day old sushi many a time, but won't have that fresh zip it had when it was made fresh.

A squirt of lemon can help, if you have that squeeze tube wasabi that's good. the wasabi from last night will be dead tasting after exposed to air. Some more soy sauce is good too, but don't expect it to taste straight from the sushi chef's hands to your mouth good!

  2. As far I know, you can't really bring sushi "back to life" after a night in the fridge- taste and consistency are affected, especially the rice, avacado, and any raw ingredients.

However, this does not necessarily mean you need to dispose of it- it just won't be as good as it was the previous day/night. Obviously, if it has spoiled, don't eat it. Some rolls keep better than others, for instance, non-raw rolls like california and shrimp tempura rolls. As long as it hasn't spoiled, it's up to you.
