Leg of Lamb cooked too soon!?

My leg of lamb has been cooked in my smoker completely, but my guests don't arrive for three hours! How do I keep the meat warm until my guests come to dinner?

  1. Keeping it warm at this stage might also create a breeding ground for bacteria to grow!  Tent it up and refrigerate it.  Remove from refrigerator shortly before serving, carve and re-heat in the oven at a low temp.


  2. I agree. Refrigerating it at this point would also lock in the juices, where keeping it warm would completely dry it out.
