In a nutshell -

The liver converts glucose into glycogen so that it can store excess glucose for later.

It contains special alpha, beta and gamma cells that produce hormones like insulin, glucagon and somatostatin which help in maintaining the blood sugar level.

It removes the amine (NH2 - )group from proteins in the ornithine/deamination cycle, thus allowing proteins to be used safely, and synthesising urea which is later excreted.

It produces bile which breaks up fats and helps in its digestion.

In foetuses, it forms red blood cells.

It also breaks down haemoglobin.
