Listeria is everywhere - found in soil, vegetation, water sewage, silage and in animal and human f***s. Many people carry it without getting ill, but to those who are susceptible, it can be devastating. Listeriosis has the highest fatality rate of all the food poisoning cases.

The bacteria may be on produce from soil, water or manure. Healthy looking animals can carry it, and contaminate meat and dairy products.

Listeria can be introduced during processing. Foods such as pâté, soft cheeses, cold cuts, smoked fish, or prepared meals that have been pre-cooked and then chilled for some time are at risk, as are products made with unpasteurized milk.

  1. No. Listeria is not always present. It is a pathogen if present in significant numbers. You cannot disinfect raw meat with bleach - cook to at least 180F.
