I live in NYC and there is a Cuban restaurant here called Sophies. They make these pork chops that are soooooo good. I've tried over and over to make them but can't seem to get the right flavor. Does anyone know of a good cuban style pork chop recipe. Gracias.

  1. the flavor you are probably looking for is mojo sauce. most cuban recipes that incorporate pork, include mojo sauce.... you can buy it at most grocers.... the brand i use is Iberia

  2. Things You’ll Need:

    8-10 pound pork shoulder

    3 heads of garlic

    3 tbl. sea salt

    2 tbl. dried oregano

    1/2 tsp. cloves

    1 tsp. allspice

    2 tbl. cumin

    3 - 4 bay leaves

    3-4 red dried chili peppers

    1 tbl. black peppercorns

cast iron roasting pot with cover

    Steps....

    1

First peel your garlic. Yes, all three heads of it!

    Step

    2

Stab little slits all over the pork with a sharp knife and stuff in the garlic cloves with your fingers.

    Step

    3

In an electric spice grinder, grind allspice, cloves, peppercorns and cumin.

    Step

    4

Combine salt, ground spices and oregano. Rub dry marinade over pork shoulder.

    Step

    5

Place red chili peppers and bay leaves in bottom of roasting pan.

    Step

    6

Place pork shoulder in pan, skin side down.

    Step

    7

Cover and cook on low heat for about 6 – 8 hours or until fork tender.

With two forks, shred the pork apart and serve on crusty rolls slathered with mayonnaise and good mustard. Delicious!
