Looking for a good dinner recipe?

I was wondering if anyone had a good recipe for dinner (that does not take loner then a hour to make) that would go good with Oreo cheese cake that I'm making for dessert. I'm bring the dinner to my husband that is working a over night so something that would not be hard to transport in a car would be great. It can be a hot dish since we don’t live far from his work it won’t get cold during the drive. Thanks!

  1. Shrimp Fried Rice.

    1-1/2 cups rice, cooked

    20-25 small shrimp

    1 onion

    1 red pepper

    1 egg

    3/4 cup peas

    1 clove garlic, minced

    1/4 cup soy sauce

    butter or oil

    Cook rice as directed, approximately 1-1/2 cups.

    In a medium-sized frying pan, sauté 1 small chopped onion, 1 red chopped pepper, and 3/4 cup frozen peas in butter or oil. Set aside.

    Next, sauté 20-25 small shrimp with 1 large clove of garlic in butter or oil. When lightly brown, add vegetable mixture.

    After just a couple of minutes, add frying pan mixture to rice pot. Quickly scramble 1 egg and add to pot as well. Add 1/4 cup of soy sauce, using judgement and preference, of course.

    Stir, simmer for a few minutes and enjoy.

    I would fill up a warmed noodle bowl, wrap in cling film and a tea towel for a little insulation.  


  2. One of my favorite meals:

    Cracker steak, scallop potatoes, green beans

    Cracker steak is cubed pork (or thin boneless pork chops), dip in egg, then coat with cracker crumbs, fry in hot oil, brown both sides. This cooks fast.

    Scallop potatoes from the box are good.

    Green beans from the can.

    Very tasty meal.

    Categories:

          Yield: 4 Servings



          3 c  Tomato wedges

          1 c  (4oz) shredded cheddar

          1 c  Bread crumbs

          1 c  Chopped green pepper

          1 sm Onion; diced

        1/4 c  Butter; melted

        1/2 ts Salt

            ds Paprika



      Preheat oven to 300°. Grease a 1 1/2 quart

      casserole.

      

      Combine; transfer to casserole. Bake until

      vegetables are tender, about 45 minutes.
