Looking for a great Red Thai Curry with eggplant?

I am not interested in bottled food i would like to make it from scratch please.

  2. You mean you want to make the curry paste from scratch?Well it's a tall list but you asked for it. Once you make the curry paste blend 1-2 tsp of curry paste with 1 can of coconut milk. add a dash of Thai fish sauce in it. Simmer sauted Japanese egg plant and bamboo shoot in it for 5-7 minutes. Garnish with chopped cilantro and a dash of lime juice.

  3. Make sure you get Thai eggplant, they are green and round the size of a softball.

    Honestly, I saw a recipe for making Thai green curry paste and one of the steps said, 'Treat this stage with extreme caution: if you overcook them a noxious gas closely related to Mustard gas is released. ' At this point I decided that ready-made was fine for me. Most restaurants use the readymade curry paste as do most of my asian friends.

    If you do make your own curry paste keep your windows open and a wet towel handy for your face. You need to understand that in Asia and India the Kitchens have outdoor sections (for frying and steps that produce smelly/ dangerous gases) and good ventillation, compared to apartment style homes.
