  1. Classic White Cake

    Ingredients:

    12 tablespoons (1 1/2 sticks) unsalted butter, softened

    1 1/2 cups sugar

    2 cups all purpose flour

    2 teaspoons baking powder

    1/4 teaspoon salt

    6 large egg whites (3/4 cup)

    3/4 cup milk

    2 teaspoons vanilla extract

    Set rack at the middle level in the oven and preheat to 350 degrees.

    Butter the bottom of two 9-inch round or one 13 by 9 by 2-inch pan. Line bottom with parchment or waxed paper.

    Directions:

    In a large bowl, beat butter and sugar for about 5 minutes, until light and fluffy. Stir together flour, baking powder and salt. Set aside. Combine egg whites, milk and vanilla extract. Add 1/3 of the flour mixture to the butter mixture then add half the milk mixture. Continue to alternate beginning and ending with flour mixture. Scape the bowl and beater often.

    Pour the batter into prepared pan(s) and smooth top with metal spatula. Bake cake(s) about 25 to 30 minutes, or until a toothpick inserted in the center emerges clean.

    Cool in pan on rack for 5 minutes, then turn out onto a rack, remove paper and let cool completely.

    Note: For a classic yellow cake- Substitute 3 large eggs and 1 yolk for the egg whites.

  3. MAKE YOUR OWN YELLOW OR WHITE CAKE MIX

    2 1/3 cups all-purpose flour

    1/3 cup nonfat dry milk

    3 teaspoons baking powder

    3/4 teaspoon salt

    1 1/2 cups white sugar

    1/2 cup plus 1 tablespoon shortening

    Mix together & store - makes 1 jar mix.

    When ready to bake, choose yellow or white, and preheat oven to 350F.

    Grease and flour a 9x13 inch cake pan

    YELLOW CAKE:

    2 eggs

    1 cup water

    1 teaspoon vanilla extract

    1 Jar Mix

    Combine all in a bowl, mixing well, pour into 9x13 greased pan.

    Bake for 25-30 minutes. Cool & Frost as desired.

    WHITE CAKE

    3 egg whites

    1 cup water

    1 teaspoon vanilla extract

    HOME MADE CAKE MIX

    This wonderful mix can be substituted for any purchased cake mix. Unlike other homemade cake mix recipes, this one has less fat, so it can be substituted for the purchased cake mix recipes, which often add oil or butter.

    INGREDIENTS:

    7-1/2 cups sifted flour

    1 Tbsp. salt

    4-1/2 cups sugar

    4 Tbsp. double acting baking powder

    3/4 cup cold butter

    PREPARATION:In very large bowl, combine flour, salt, sugar and baking powder and mix well to blend. Cut the butter into small pieces and place on food processor bowl along with 2 cups of the flour mixture. Cover and process until mixture is very fine.

    Add to remaining ingredients and stir well with wire whisk to blend.

    Divide the cake mix into three equal portions (about 4 cups each) by lightly scooping the mix into measuring cups and leveling off with the back of a knife. Place each portion into a quart glass jar or heavy duty zip lock plastic bags. Cover tightly and store in the refrigerator for up to a month, or in the freezer for up to 3 months. Each portion of cake mix will make two 8" cakes or one 13x9" cake.

    RECIPES

    YELLOW CAKE

    4 cups cake mix

    2 tsp. vanilla

    1/4 cup butter, softened

    3 eggs

    1 cup milk

    Preheat oven to 350 degrees. Grease and flour 2-8" round cake pans and set aside. Pour one portion of the cake mix into a large bowl. Make a well in center of mix and add vanilla, butter, eggs, and milk. Beat mixture 1 minute with electric mixer at low speed until blended. Scrape sides and bottom of bowl and beat 2 minutes longer at medium speed until batter is smooth.

    Pour into prepared pans and bake at 350 degrees for 30 - 40 minutes, or until cake springs back when pressed lightly in center and begins to pull away from edges of pan.

    WHITE CAKE

    Use 4 medium egg whites in place of 3 whole eggs. Do not beat whites separately, just add them to the mix along with the milk and vanilla.

    SPICE CAKE

    Add to the dry ingredients:

    1 tsp. ground cinnamon

    1/2 teaspoon allspice

    1/4 teaspoon cloves

    CHOCOLATE CAKE

    Add to the batter after initial blending:

    2 Tbsp. milk

    3 squares unsweetened chocolate, melted

    3 Tbsp. cocoa powder

  5. SILVER WHITE CAKE

    2 cups all purpose flour* or 2 1/4 cups cake flour

    1 1/2 cups sugar

    3 1/2 teaspoons baking powder

    1 teaspoon salt

    1/2 cup shortening

    1 cup milk

    1 teaspoon vanilla

    4 egg whites

    Heat oven to 350 degrees. Grease and flour oblong pan, 13x9x2 inches, or 2 round layer pans, 9x1 1/2 inches. beat flour, sugar, baking powder, salt, shortening, milk and vanilla in large mixer bowl on low speed, scraping bowl constantly, 30 seconds. Beat on high speed, scraping bowl occasionally, 2 minutes. Add egg whites; beat on high speed, scraping bowl occasionally, 2 minutes. Pour into pan(s).

    Bake until wooden toothpick inserted in center comes out clean, oblong 35 to 40 minutes, layers 30 to 35 minutes; cool. Frost with Pink Mountain Frosting if desired.

    *Do not use self-rising flour in this recipe.

    PINK MOUNTAIN FROSTING

    1/2 cup sugar

    1/4 cup light corn syrup

    2 tablespoons water

    2 egg whites

    1 teaspoon vanilla

    Red food coloring

    Mix sugar, corn syrup and water in saucepan. Cover; heat to rolling boil over medium heat. uncover; boil rapidly until candy thermometer registers 242 degrees or until small amount of mixture dropped into very cold water forms a firm ball that holds its shape until pressed.

    As mixture boils, beat egg whites until stiff peaks form. Pour hot syrup very slowly in thin stream into egg whites, beating constantly on medium speed. Add vanilla and 8 drops red food coloring; beat on high speed until stiff peaks form. FILLS AND FROSTS TWO 8- OR 9-INCH LAYERS OR FROSTS A 13X9-INCH CAKE.
