I only know one Medieval themed restaurant and it is in Toronto. It is called Medieval Times Restaurant. It is soo cool it is a dinner and show. Its really  expensive but it is worth to go there.

Wow, hard question but I have found what you are looking for, the only Medieval Theme Restaurant in the Edmonton region.

There is a great "medieval hall" in south Edmonton in the same building as the Indoor Golf Dome.

They  have medieval dinners and entertainment. The Dinner Shows this month are on Nov. 24 and 25. In December there are several more.  Check out the web site!
