  1. I've got 2 different ones for you that are delicious!

    PEANUT BUTTER CUPS

    1 8-ounce milk chocolate Hershey bar

    1/2 c. creamy peanut butter

    1 c. chunky peanut butter

    Small (1&1/2 inch) baking cups

    1)  In a double boiler melt chocolate with creamy peanut butter.

    2)  Put 1 c. chunky peanut butter in pyrex dish; set in pan of hot water to soften.

    3)  Using 20-22 1-inch muffin cups (you can purchase foil ones at the grocery store if you don't have these at home), divide chocolate-peanut butter mixture, using half to layer on bottom of cups.  Chill.  

    4)  Then cover with a layer of chunky peanut butter.  Chill.

    5)  Use balance of chocolate-peanut butter on top.  Chill.

    PEANUT BUTTER BARS

    Crust:

    10 medium-sized chocolate chip cookies

    1/4 c. butter, melted

      

    Crush cookies very fine; add butter and mix.  Press mixture into 8 x 8 inch pan.  Bake in preheated 350 degree oven for 10 minutes.

    Chocolate Layers:

    2 cups milk chocolate chips

    Melt chocolate over simmering water.  Pour 1/2 of the chocolate over baked crust.

    Peanut Butter Filling:

    1&1/2 c. creamy peanut butter

    1/2 c. butter softened

    3 c. powdered sugar

    2 t. vanilla

    Blend peanut butter and butter together until very smooth.

    Add powdered sugar and vanilla.

    Beat until smooth.

    Spread peanut butter over chocolate layer and top with remaining half of chocolate mixture.

    Chill before cutting.

    Peanut Butter Sandwich Cookies

    INGREDIENTS:

    1 cup peanut butter

    1 cup butter flavored

    shortening

    1 cup white sugar

    1 cup packed brown sugar

    1 teaspoon vanilla extract

    3 eggs 3 cups all-purpose flour

    2 teaspoons baking soda

    1/4 teaspoon salt

    1/2 cup creamy peanut butter

    3 cups confectioners' sugar

    1 teaspoon vanilla extract

    5 tablespoons milk

    DIRECTIONS:

    1. Preheat oven to 375 degrees F (190 degrees C).

    2. In a large mixing bowl, cream the shortening, 1 cup creamy peanut butter and white and brown sugars. Add vanilla and then eggs, one at a time. Beat well after each addition. In a small bowl, combine flour, baking soda and salt. Add slowly to creamy mixture.

    3. Shape into 1 inch balls and place on an ungreased cookie sheet, 2 inches apart. Flatten balls with a fork.

    4. Bake for 7-8 minutes depending on size (I tend to keep a close eye on them and remove them as soon as they start to get golden. This helps to make them chewy.) Cool on wire racks.

    5. To Make the filling: Combine 1/2 cup creamy peanut butter, confectioners' sugar, vanilla extract, and milk in a small bowl adding enough milk to make for a creamy, frosting like texture. Spread frosting on one cookie and top off to make "sandwich".

    Preparation:

    Wrap dough in plastic wrap and refrigerate until chilled, or about 2 to 4 hours.

    Take tablespoonfuls of dough and roll into balls with hands. Place about 3 inches apart on greased baking sheets. Using a dinner fork dipped in flour, lightly press cookies, flattening and forming a criss-cross pattern on each cookie.

    Bake at 375° until golden brown, or about 10 to 12 minutes. Cool on baking sheets for a minute; transfer to rack to cool completely.

    Makes about 4 dozen peanut butter cookies.

  6. Magical Peanut Butter Cookies

    1 cup peanut butter, creamy or crunchy

    1 1/3 cups baking sugar replacement (recommended: Splenda)

    1 egg

    1 teaspoon vanilla extract

    Preheat the oven to 350 degrees F. Grease a large baking sheet.

    In a mixing bowl, combine the peanut butter, 1 cup sugar replacement, the egg, and vanilla, and stir well with a spoon. Roll the dough into balls the size of walnuts. Place the balls on the prepared baking sheet. With a fork, dipped in sugar replacement to prevent sticking, press a crisscross design on each cookie. Bake for 12 minutes, remove from the oven, and sprinkle the cookies with some of the remaining sugar replacement. Cool slightly before removing from pan.

  7.   Peanut Butter/Chocolate Chip Cookie Bars

    INGREDIENTS (Nutrition)

        * 1/2 cup butter

        * 1 1/2 cups graham cracker crumbs

        * 1 (14 ounce) can sweetened condensed milk

        * 2 cups semisweet chocolate chips

        * 1 cup peanut butter chips

    DIRECTIONS

       1. Preheat oven to 350 degrees F.

       2. Melt butter over low heat.

       3. Pour butter into 13 x 9 inch pan. Sprinkle graham cracker crumbs over butter.

       4. Pour condensed milk over crumbs. Sprinkle chocolate and peanut butter chips over milk mixture and press down firmly.

       5. Bake 25 to 30 minutes.
