Really and truly, this is just so simple and full of good common sense, YOU, pick out what you want to serve, chicken, fish, beef, pork, etc., and go on your search engine on the net and just type in what you want, such as, " Chicken casseroles", Ground beef recipes, Fish recipes, etc,. and many will come up and you sort thu, pick and print out what you want, how simple is that, also, Recipezarr.com, The Food network, there are many sites to pick up and thousands from there to pick. Not hard, just get your fingers to walkin girl, and as Larry the Cable Guy says, "Get er done!"

    Poppy Seed Chicken Casserole

    Minute rice

    3 lbs. chicken b*****s

    1 (16 oz.) carton sour cream

    1 can cream of chicken soup

    1 1/2 c. crushed Ritz crackers (one pack)

    1 stick butter

    2 tbsp. poppy seeds

    Boil chicken 15 to 20 minutes or until thoroughly cooked. Cut chicken into bite-size pieces. Mix chicken, sour cream and soup together. Spread thinly in greased casserole dish.

    In separate dish mix together: crushed crackers, melted butter and poppy seeds. Sprinkle this mixture on top. Bake at 325 degrees for 30 to 40 minutes. Serve over rice. Delicious!!

    Low Fat Poppy Seed Chicken

    This popular dish can be cooked with low-fat or non-fat ingredients for a healthier version, and leaving the topping off would cut the fat content even further.

    * Boil one large chicken with a bay leaf, salt and pepper (you can also add a bouillon cube if salt isn't a problem)

    * Remove skin and bones and cut chicken into bite size pieces.

    * Mix together and add the following ingredients:

    1/2 c. broth from the chicken (skim fat off the top or use a gravy measuring cup)

    1 c. lite or fat-free sour cream

    1 c. reduced fat cream of chicken soup

    1 T. poppy seeds (store this expensive spice in the freezer to keep fresh longer)

    * Melt 1/2 stick margarine.

    * Crush 1/2 tube of reduced fat Ritz crackers (crush them while they are still in the package, makes clean up easier)

    * Top the chicken mixture with crackers and drizzle with melted margarine.

    * Bake for 45 minutes at 350 degrees, serve over rice or pasta.

    Chocolate Brownie Cake with Coffee Icing

    2 sticks butter

    2 c. sugar

    1/2 c. cocoa

    6 eggs, separated

    1 tbsp. vanilla

    1 c. sifted flour

    2 c. nuts

    Cream butter, blend in sugar and cocoa. Stir in egg yolks; when well blended, fold in by hand sifted flour, chopped nuts, egg whites which have been beaten to stiff peaks and vanilla. Pour into long pan (8 x 12 inch or similar). Bake at 350 degrees for 35 minutes. This cake will be moist in center as brownies. After cooling, spread with coffee icing.

    Coffee Icing:

    1 stick butter

    1/2 c. cocoa

    1/2 c. cold coffee

    1 tbsp. vanilla

    1 box powdered sugar

    Pinch of salt

    Cream butter until whipped light. Alternate sugar, coffee and cocoa (cocoa depends on ones taste for cocoa, up to 1 cup can be used). Add vanilla and pinch of salt and blend thoroughly. This is my daughter Julia's favorite recipe. It is almost candy to me.

    Low Fat Brownie Pudding Cake

    1 c. flour

    3/4 c. sugar

    2 tbsp. unsweetened cocoa powder

    2 tsp. baking powder

    1/2 tsp. salt

    1/2 c. skim milk

    2 tbsp. vegetable oil (can use less)

    1 tsp. vanilla

    3/4 c. brown sugar

    1/4 c. additional cocoa

    1 3/4 c. hot water

    Stir together the flour, sugar, cocoa, baking powder and salt. Stir in milk, oil and vanilla. Pour into a non stick 8 or 9 inch square baking pan.

    Blend brown sugar, cocoa and hot water separately and pour over batter. Bake at 350 degrees about 45 minutes.

    The cake will rise to the top, with chocolate sauce at bottom to spoon over cake. Best served warm.
