  1. Preheat oven to 350 degrees.

brown one pound of ground beef in a pan until all of the pink is gone

Drain the beef and set aside.

Wash, peal and thinly slice (1/8") 1 pound at least of potatoes.

Thinly slice some good onion (sweet preferred) and separate the rings.

Make a large portion (2-3 cups) of instant mashed potatoes.  Don't make too wet.  A little on the dry side is nicer.

In a 9X12" baking dish or casserole add the ingredients in LAYERS.

    First the beef

    Second the onion rings

Third the Mashed potatoesAdd salt and pepper to your taste.

Cover all with a thick layer of american cheese.  (1/4 - 1/3")

Cover entire baking dish with foil or place the lid on the casserole.

Bake for 20-30 minutes (everything is already cooked)

For the last 5 minutes, remove the foil or lid and let the cheese brown.

//you might need to use the broiler of the oven//

  2. These are the 2 recipes I found and we love...............

    SHEPHERD'S BEEF PIE

    INGREDIENTS..........

    1 tablespoon vegetable oil

    1 onion, chopped

    1 pound lean ground beef

    1 teaspoon dried basil

    1 clove garlic, minced

1 cup green beans (sometimes I use carrots)

    1 cup tomatoes, diced

    2 potatoes, cooked and mashed

    1 egg, beaten

    1/2 cup water

1/4 cup shredded Cheddar cheese (optional)

    DIRECTIONS

Preheat oven to 350 degree F (175 degree C). Coat a 2 quart casserole dish with cooking spray.

Heat oil in a large skillet over medium heat. Cook onion in oil for 5 minutes, stirring frequently. Stir in the ground beef and basil, and cook and stir for 5 more minutes. Mix in the garlic, green beans, and tomatoes, and simmer for 5 minutes. Transfer beef mixture to prepared dish.

In a mixing bowl, mix together the mashed potatoes, egg, and water. Spread evenly over meat mixture.

Bake in a preheated oven for 15 to 20 minutes, or until potatoes start to brown on top. Sprinkle with cheese, and continue cooking for 5 minutes.
