  1. Grilled Indian Lamb Chops:

    INGREDIENTS:

    12 lamb rib chops

    1/4 cup water

    3 tablespoons oil

    2 tablespoons curry powder

    1 tablespoon white vinegar

    2 teaspoons curry powder

    2 teaspoons onion powder

    1 teaspoon garlic powder

    1 teaspoon garam masala

    1/4 teaspoon salt

    PREPARATION:

    Place lamb chops in a shallow baking dish. Combine remaining ingredients and pour over chops. Cover and refrigerate for 1-3 hours. Preheat grill for medium heat. Place chops on a well oiled grill grate and cook for 4 minutes on each side.

    Remove from heat and serve with your favorite chutney or yogurt sauce.


  2. Pakistani Lamb

    2 lb. boneless lamb cut in 1 in. cubes.

    1 cup water

    1 small onion chopped

    1 green pepper cut in 1 in. squares

    1/2 cup flour – 1 1/2 salt – 1/4 pepper

    2 table spoon cooking oil

    1/4 teaspoon mace

    1 cup thinly sliced celery

    1   Combine flour, salt & pepper.

    2 Rub meat in the seasoned flour from step 1.

    3 Heat meat until brown in oil, sprinkle any remaining seasoned flour over lamb.

    4 Add water, mace and onion.

    5 Cover tightly and cook slowly for 45 minutes.

    6 Add celery and green pepper & cook 45 minutes longer or until lamb is tender.

    7 Serve over rice.

  3. I made this last night and it was delicious. You might like it as well. You need to make a trip to your nearest Indian/Pakistani grocery store for a packet of Meat Masala or Kurma Masala, or Matka Ghost Masala or Memoni Muton Biriyani Masala (sorry if this is confusing but I love all of them). season stew cut lamb with, salt, pepper, lime juice and your preferred Masala (spice). Marinate overnight for best results (or at least for a couple of hours). In a dutch oven heat butter or oil. Add a few (3-4) green cardamoms, 1 stick of cinnamon, 2 bayleaves and a few cloves. when they splutter add finely chopped red onion, garlic and a couple of tomatoes. Saute till onion is light golden. Add lamb, saute, top it with chopped jalapeno or Thai chilies (if you are brave). Cover it and let it cook over a low heat for a couple of hours. Open from time to time to check the cooking liquid, you may want to add a little hot water if it looks too dry. Enjoy with steamed basmati rice, paratha or pita.

    Original recipe yield: 4 servings

    INGREDIENTS

    1/4 cup brown sugar

    2 teaspoons ground ginger

    2 teaspoons dried tarragon

    1 teaspoon ground cinnamon

    1 teaspoon ground black pepper

    1 teaspoon garlic powder

    1/2 teaspoon salt

    4 lamb chops

    DIRECTIONS

    In a medium bowl, mix brown sugar, ginger, tarragon, cinnamon, pepper, garlic powder, and salt. Rub lamb chops with the seasonings, and place on a plate. Cover, and refrigerate for 1 hour.

    Preheat grill for high heat.

    Brush grill grate lightly with oil, and arrange lamb chops on grill. Cook 5 minutes on each side, or to desired doneness.

  5. Lamb kabobs are very easy.

    4inch piece of garlic peeled and chopped

    2 med onions peeled and chopped

    1 small bunch of cilantro

    1 tbs coriander seeds

    juice of 1 lemon

    2 green chili's

    1/2 tsp black peppercorns

    2 lbs lean lamb cubed

    1 tsp salt

    2 tbs melted butter

    put everything but lamb, salt, and butter in a blender

    blend until a smooth paste is formed

    pour into a bowl and add lamb cubes

    toss well

    cover and set aside at room temp for 3-4 hours

    thread lamb on to skewers

    salt the lamb and drizzle melted butter over

    grill until desired temperature is achieved

    Very easy and very good..
