Looking for information, I am doing a wedding BBQ for 50, Chicken & Tri-Tip, grilled vegsHow much to buy??

Trying to figure out how much chicken & tri-tip and veggies and fruit to buy?

I was thinking 15lbs chicken and 20lbs Tri-tip, 15lbs of veggies, 10-14lb cheese for platter, fresh Strawberrys, blueberries, watermelon for fruit platter, any suggetions?

  1. Ask your butcher - they should be able to tell you how many lbs per person to prepare...


  2. 15 lbs of chicken won't go that far;  I'd get 25 lbs of chicken and 25 lbs of tri-tip.  You don't know how many will want only 1 entree, and you need 1/2 lb/person.   Blueberries aren't that easy to pick up for a fruit platter; but you could slice or cube cantaloupe and honeydew with the strawberries & watermelon.  Sliced starfruit looks wonderful as a garnish; and kiwis; and fresh mint sprigs; maybe cut grapes into individual-sized bunches for the fruit or cheese platters (You can dip the grapes into lightly beaten egg whites; then roll in sugar & dry on a cookie rack for "frosted grapes") .....  And don't forget dessert!  Mini cheesecakes (in cupcake papers);  a big Texas sheet cake;  lemon bars should cover everyone tastes

    there are a few thinks you have to take into consideration before you come up with answer you must ask

    1. what kind of eaters are they ( lots of children, more men more women) this affects your purchases

    2. what kind of chicken ( 9 cuts chickens or just b*****s)

    3. what are tri tips and how are you cooking them

If this is an informal wedding, you may want to do fruit skewers.  This is easy to make and it cuts down on how much fruit the guests get.  I would do two skewers per quest.  It sounds like you will have plenty of meat.  I have an easy recipe for BBQ beef bundles as an appetizer see below, You may want to also do celery and carrot sticks and ranch dressing, Crackers as well for the cheese platter. I would do a chocolate fountain or have a candy bar.  That went over well at the last wedding I went to.  You can order M & M's with the bride and grooms name on them.

    I have made these before and they are delicious!

    3/4 pound lean ground chuck

    1 cup ketchup

    2 teaspoons vinegar

    3 tablespoons Barbecue Seasoning Mix**

    3 ounces cheddar cheese, grated, divided (3/4 cup)

    1/2 cup green onions with tops, thinly sliced

    1/2 cup red bell pepper, chopped

    1 garlic clove, pressed

    1 package (17.3 ounces) grand-size flaky or buttermilk biscuits (8 biscuits)

    1 package (10.2 ounces) grand-size flaky or buttermilk biscuits (5 biscuits)

    ** Recipe for Seasoning:

    Barbecue Seasoning Mix Recipe

    Ingredients:

    6 tablespoons Salt

    6 tablespoons course ground black pepper

    3 teaspoons ground cayenne pepper

    6 tablespoons dark chili powder

    12 tablespoons Paprika

    6 tablespoons ground Cumin

    12 tablespoons granulated Sugar

    Directions:

    Combine all ingredients, mix thoroughly. Place in jar with tight fitting lid, use as desired. Makes 3 cups

    You can buy it or use this recipe to make it.

    Directions  

    Cook ground beef in large (10-inch) skillet over medium heat 8-10 minutes or until beef is no longer pink, breaking into crumbles; drain and set aside.

    Preheat oven to 350° F. In small bowl, combine ketchup, vinegar and Seasoning Mix; mix well and set aside.

    Grate cheese. Slice green onions. Chop bell pepper. In a bowl, combine cooked beef, 1/2 cup of the cheese, green onions, bell pepper, garlic pressed with Garlic Press and half of the barbecue sauce; mix well.

    Separate 12 biscuits and place on cutting board. (Discard remaining biscuit or set aside for another use.) Using a roller, roll each biscuit into a 5-inch disk, flouring dough as needed. Using a large scoop, divide beef mixture evenly onto center of each biscuit.

    Gather up edges of dough over filling, pinching lightly to seal. Place biscuits, seam side down, into muffin pan. Do not press down into cup. Using serrated bread knife, cut through top of each bundle, making a crisscross pattern.

    Bake 25-30 minutes or until golden brown. Remove from oven; sprinkle remaining cheese evenly over bundles. Remove from pan to cooling rack. Serve with remaining barbecue sauce
