Looking for recipes for a toddler!?

I have a 14 mos old that needs to pack on the weight and increase her iron intake. She will no longer eat purreed foods and is off of dairy. We are already doing smoothies with goat milk, goat ice cream, and almond butter. Any recipes for cookies or bars that are easy snacks?

  1. when my kids where that small i had the same problem with the iron.  weight is not the really issue ever packing on the pounds using unhealthy food is bad for them.  check out this site i found it awhile back for my sister.  hope it helps

  2. For weight gain, get Carnation Instant Breakfast, and serve them with meals. It's just like strawberry milk or chocolate milk. They also come sugar free. You can also make them into milkshakes, sorta like Malts also. They are high in iron also.

  3. Try oatmeal cookies - you can sub out the milk for soy milk and some sugar with unsweetened applesauce. Quick oats are usually fortified with extra iron. For example (I would skip the nutmeg for a toddler - I think it is an acquired taste) :

    Ingredients

    3/4 cup shortening

    1 1/4 cups firmly packed brown sugar

    1 large egg

    1/4 cup milk

    1 1/2 teaspoons vanilla

    1 cup flour

    1 1/4 teaspoons cinnamon

    1/2 teaspoon salt

    1/4 teaspoon baking soda

    1/4 teaspoon nutmeg

    3 cups quick oats (not instant or old fashioned)

    1 cup peeled diced apple

    Directions

    Preheat oven to 375° and grease cookie sheet.

    Combine shortening, sugar, egg, milk and vanilla in large bowl.

    Beat at medium speed until well blended.

    Combine flour, cinnamon, salt, soda and nutmeg in a small bowl and mix into creamed mixture at low speed until just blended.

    Stir in oats, apples.

    Drop rounded tablespoonfuls of dough about 2-inches apart onto prepared cookie sheets.

    Bake for 13 minutes or until just set.

    Cool for a minute or 2 on cookie sheets and then remove to a wire rack to cool completely.

  4. At that age she's starting to enjoy "playing" with her food. Roll up the goat cheese in fresh spinach leaves. Leafy greens are good sources for iron. Give her fish sticks or other baked fish. Use common sense regarding the bones. Fish is a great source of iron. I'm assuming you've gotten advice from her doctor as well.

  5. i would gradually increase her caloric intake, and with healthy additions to her regular diet.

    add cheese to her scrambled egg

    soften peanut butter in the microwave and let her "dip" in fresh sliced fruit...such as apples and bananas

    how about string cheese?

    i am also anemic..and the quickest way to give your body extra iron is red meat...so maybe pasta with a meat sauce

    however...nothing beats a good cookie :)

    soft peanut butter cookies

    Ingredients

    1 cup creamy peanut butter

    1 cup packed brown sugar

    1 cup white sugar

    1 cup butter or margarine, softened

    2 eggs

    1 teaspoon baking soda

    1 teaspoon baking powder

    1 teaspoon vanilla extract

    2 1/2 cups flour

    Directions

    1Cream butter, peanut butter and sugars together.

    2Add eggs, one at a time, beating well.

    3Add baking soda, powder and vanilla.

    4Stir in flour.

    5Roll into balls, roll in sugar. Flatten cookies, using a fork, in a criss-cross pattern.

    6Bake on ungreased cookie sheet at 350 degrees for 6-7 minutes.
