  1. LOW CARB PIZZA CRUST

    2 cups soy flour

    4 eggs

    1 cup heavy cream

    1/2 cup seltzer water

    1 1/2 tsp salt

    Preheat oven to 375F degrees.

Beat eggs until yolks and whites are combined. Pour in cream and seltzer water. Add salt and stir in soy flour.

    Mixture will be slightly liquid.

Butter 3 individual size pizza pans (about 9" or you can also use pie plates) generously. Spread batter thinly on pans.

Bake until slightly browned and cooked through.

  2. Ever had St. Louis Style pizza?  It is a cracker-like, super thin pizza crust.  Here is a recipe.

    Makes two 12" pies

    2c. + 2T all purpose flour

    1/2 tsp. salt

    1 tsp. baking powder

    2 tsp. olive oil

    2 tsp. dark corn syrup

    1/2 c. + 2 T. water

Mix all ingredients til thoroughly combined.  Dough will be stiff.  No need to rise or knead.  Divide in half and roll out paper thin.  Use cornmeal and a pizza padle to transfer crust.

Use a smoky cheese like a mozz/smoked provolone blend--top with sauce and favorite toppings.

Bake on preheated pizza stone for 10-12 minutes @ 450F.

    Cut in squares and serve.

  3. UNO'S PIZZERIA style PIZZA RECIPE

    2 packages Yeast

    2 cup Tepid water

    1/2 cup Salad oil

    4 tablespoon Olive oil

    3 cup Flour

    1/2 cup Cornmeal

    2 teaspoon Salt

    2 1/2 cup Flour

    -

    Sauce:

2 can Plum tomatoes 28 ounces (drained -- crushed)

    1 Mozzarella -- to taste

1 pinch salt -- ground pepper

1 garlic clove -- chopped; to taste

    1 Basil -- fresh; chopped

    1 Oregano -- fresh; chopped

    1 Meat -- choice

    1 Onion -- etc; choice

    1 Parmesan -- to taste

1 Romano cheese -- to taste

Mix two packets of yeast in 2 cups of tepid water and let sit for ten minutes.

    Add 1/2 cup salad oil.

    Add Olive oil,

3 cups flour; cornmeal and salt.

    Knead for about ten minutes.

Add 2-1/2 cups of additional flour.

    Knead this for 15 minutes.

Let dough rise to twice its size.

Use blackened deep dish pizza pans.

Use two pans and make two pizzas at a time.

Spread the pan with olive oil and sprinkle with cornmeal. Divide the dough in half.

Spread and cover the bottom of the pan.

    Spread it up the sides.

Then let it rise again in the pan.

Cover pizza dough with sliced mozzarella.

Drain and squash a 28 ounce can of plum tomatoes for each pizza.

Drain off the excess fluid after squashing, and spread this over the cheese.

Smidge of salt and ground pepper over the top.

Chopped garlic, fresh chopped basil and oregano.

Add the filling of your choice (I use sliced onion and Italian Sausage).

Top with a Parmesan/Romano Cheese mix.

Bake in preheated oven at 475 degrees for 35-40 minutes.

    ----

    or GO TO dough recipe

2 packages rapid rise dry yeast

    2 cups warm water

    1/2 cup vegetable oil

    4 tablespoons olive oil

    1/2 cup cornmeal

    5 1/2 cups flour

In the bowl of a stand mixer (e.g. KitchenAid), dissolve the yeast in the water. Add the vegetable oil, olive oil, cornmeal, and half of the flour. Beat for 10 minutes. Attach the dough hook and mix in the remaining flour. Knead for several minutes with the mixer. (Note: because the dough is very rich and moist, it would be difficult to do this by hand.)

Remove dough and place on a clean countertop. Cover with a very large metal bowl and allow to rise until double in bulk. Punch down and allow to rise again. Punch down a second time and you are ready to make pizza!

Oil your deep-dish pizza pan. Depending on the size of your pan, place some dough in the pan and push it out to the edges using your fingers. Put in enough dough so that you can run the crust right up the side of the pan. Make it about 1/8-inch thick throughout the pan.

  4. Here's my recipe:

    Step 1- The Crust

    Ingredients:

    1 package yeast

    3/4 cup warm water

    2 teaspoons honey

    1 1/2 cups flour

    1/2 cup whole wheat flour

    3/4 teaspoon salt

up to 1/4 cup extra flour

    Directions:

Dissolve the yeast and honey in the warm water and let it sit until foamy.  Put the two types of flour and salt in the food processor and pulse a few times.  With processor on (use the bread setting if you have one), add the yeast/water/honey mixture through the feed tube.  Once the mixture has formed a ball, add extra flour one tablespoon at a time through the feed tube, stopping when the ball can rotate around the processor without leaving a sticky mess on the sides.  Transfer to a lightly oiled bowl, flip the oiled side up, and cover with a towel to rise for about 30 minutes while you make the sauce and grate the cheese.
