I know it's one of the Lord of the Rings movies but which one .. The one where they were fighting those Orcs when the Bow and arrow men joined them to defend the castle

Yeah it's Two Towers.

That scene is found in the Two Towers movie. It is the second (and in my opinion the best) film in the series. Also the "Bow and Arrow men" are actually elves from Lothlorien.
