  3. If you are on a vegetarian diet, the last thing you need to be concerned about is low calorie meals. Eating vegetables is essentially a low calorie way of eating. If it's a simple meal your after that's fine, but I wouldn't worry about your calorie intake.

  4. Individual veggie meatloafs, tofu/veggie stirfry w/brown rice, chopped veggie salad, chili w/soy crumbles & lots of beans, portobello mushroom "burgers", oriental veggie lettuce wraps, a simple rustic Italian sauce of chopped tomatoes, basil, & garlic (my fave).

    As long as you have a stocked pantry & an imagination, the possibilities are endless.  Good luck!

  5. This is abt 500 calories, but its a whole meal sooo

    Tofu, firm

    olive oil

    peppers, onions, brocoili, corn, ect.

    one cup precooked rice

    ok, so i just fry the tofu in a pan till lightly brown with a teaspoon of olive oil, then add the veggies after browned, till they are cooked, then i add a little sause (you choose! i like a asian inspired one) and the rice, add a LITTLE water and mix, let sit for abt 5 minutes ,the brocoi gets kinda steamed that way.  then enjoy!!!

    This is the first vegetarian meal i made with tofu, i think its awsome, you could also marinate the tofu in whatever sause you used. or soy sause

  8. You can lighten up any vegan meal by using less oil. I have found that using Pam Organic Olive Oil cooking really helps. I have also found that eating less bread and pasta has helps to keep my calorie count down. When I do eat pasta and bread I make sure I choose high fiber versions (usually whole wheat/whole grain)

    If you do have a hankering for a sandwich and you like peanut butter, try PB2! It's a powdered peanut butter that you add water to. You can make it as creamy or as dry as you like. It tastes pretty good and has way less calories/fat than regular peanut butter. I have it with apple butter which has less calories and sugar than jam or jelly.
